Carrots are quite a versatile root vegetable. You can prepare a side dish, dessert, first course, or salad from them. They can be consumed raw, boiled, stewed, or fried... So why not try experimenting with them, adding both sweet and savory flavors, as well as some spiciness and acidity?
This is exactly what we decided to combine in one dish by preparing baked carrots with garlic, honey, balsamic sauce, olive oil, a mixture of Greek herbs, and feta cheese.

From the specified proportions of ingredients, we managed to prepare dishes for 4 small portions, which we served as an addition to rice and fish:
4 medium carrots
1 tablespoon of honey
5-6 cloves of garlic
4-5 tablespoons of balsamic sauce
5 tablespoons of olive oil
mixed dry seasoning βGreekβ - to taste
salt, black ground pepper - to taste
feta cheese β Β½ package (about 140 grams)
Preparation
We wash and peel the carrots. Cut them into fairly large pieces.
We grate the garlic. In a separate container, mix the honey (if it is hard due to crystallization β soften it for a few seconds in the microwave or melt it in a water bath), balsamic sauce, olive oil, freshly grated garlic, and all the other dry ingredients.

We transfer the carrots to a baking dish.
We add the prepared marinade and mix thoroughly.
We place it in the oven to bake at a temperature of 190 degrees for one hour (we turned on the upper and lower heating elements, as well as the convection mode). As a result, the carrots remain crunchy but are cooked through and infused with the aromas of all the marinade ingredients. Thatβs why we called it spicy at the beginning of our post.
We take the dish out of the oven and add crumbled feta cheese in random cubes.
