Hot sandwich “Malva” is probably the most famous fast food in Chernivtsi. It is unlikely that you can find a person who, while studying at universities in Chernivtsi, at least once during their student years, enjoyed these hot, cheese-sausage-tomato, and mega-aromatic sandwiches during a break between classes or at Soborna or Teatralna Square.Feeling the vibe of nostalgia, we decided to recreate them at home. We will need:
Buns (mini-baguette), loaf, or just white bread
300 g of boiled sausage
3 eggs
200 g of hard cheese
bunch of dill
bunch of green onions
mayonnaise (1 pack 160 g)
salt and pepper to taste
tomato sauce (“Kherson”, “Ukrainian”) for drizzling the hot sandwich

Preparation
The whole secret of “Malva” is in the filling and the sauce with which it is drizzled. And in the generous amount of cheese. So first, we will prepare the filling. We boil the eggs hard. We grate the sausage, half of the cheese, and the boiled eggs. We chop the dill and onions.

We transfer all the chopped ingredients into a bowl, add mayonnaise, season with a little salt and pepper to taste, and mix thoroughly.

We grate the second half of the cheese. We place the filling on the bun, cut lengthwise in half, or on white bread (we used both). We sprinkle the sandwiches with grated cheese.

The remaining mixture is transferred to a container and stored in the refrigerator until the next batch of sandwiches. Or we use it for a larger number of sandwiches for a big company.
We preheat the oven to a temperature of 200 degrees (with the upper and lower heating elements on and convection mode). We bake the sandwiches for about 10 minutes.
We take them out and drizzle sauce on top.
We enjoy, reminiscing about student times. In our humble opinion, “Malva” tastes best with tomato juice, but everyone has their own preferences.
