It's autumn outside, which means it's time for seasonal pumpkin dishes. We decided to start with a dessert and prepared pumpkin muffins. This is quite a simple dish, the only difficulty being the peeling of the pumpkin and the slightly extended cooking time due to the need to pre-bake the pumpkin until soft. So, we will tell and show you how we prepared these seasonal treats.

We will need:
500 g of pumpkin (weight indicated without seeds and skin)
300 g of flour
2 eggs
60 ml of milk
120 ml of oil (we used grape seed oil, which is perfect for baking)
We peel the pumpkin and clean the core (removing seeds and membranes; we can dry the seeds and use them in food, or add them to salads, soups, etc.). We chose a "guitar" pumpkin because its flesh is sweet and perfect for baking.

The pumpkin should become soft, so this time may depend on both the pumpkin itself and the size of the pieces.
We take the pumpkin out of the oven and let it cool for a few minutes.

We used an immersion blender, although a bowl blender can also be used. It’s a matter of convenience and what devices you have on hand.
In a large bowl, we crack the eggs, add sugar (cane and vanilla), pour in the milk, oil, and mix thoroughly with a whisk.

We sift the flour, starting to gradually and in small portions introduce it into the main mixture, constantly stirring with a whisk.

When we have mixed in half of the flour, we add baking soda and baking powder to the dough. We continue to add flour and mix thoroughly to prevent lumps from forming.

We fill the muffin molds with the dough up to ¾ full
За кілька хвилин до випікання
We place them on a baking sheet and put them in the preheated oven at 180 degrees. The top and bottom heating elements and convection mode are turned on. We will bake for 30 minutes.

From the amount of ingredients used, we got 17 small muffins. It is also possible to pour the dough into a large muffin mold to get one big one ;) We take the muffins out of the mold, wait for them to cool, sprinkle with powdered sugar, brew our favorite hot drink, and enjoy.
