Worcester sauce – is one of the most famous British seasonings with a rich, deep taste umami. It combines acetic acidity, sweetness of molasses, spicy spices and distinct taste of anchovies. Due to its complex composition and fermentation, this sauce has become a versatile ingredient in cooking – from marinades to cocktails.
How did Worcester sauce come about?
The history of Worcester sauce begins in the first half of the 19th century in the city of Worcester (Worcestershire, sometimes called Worcestershire) in the west of England. According to legend, a local aristocrat, Lord Sandys, returning from a trip to Bengal, wanted to recreate his favorite Indian sauce. For this, he turned to two apothecaries – John Lee and William Perrins.
They they believed in themselves and they tried to reproduce the recipe by mixing vinegar, spices, anchovies and tamarind, but the resulting mixture had too sharp a taste. The product was considered unsuccessful, placed in the basement of the pharmacy and completely forgotten about it. However, a few months later, barrels of forgotten sauce were accidentally opened, and pharmacists discovered that fermentation had significantly improved the taste of the product. The famous Lea & Perrins Worcestershire Sauce was born, which later became a commercial hit.
Composition and features
The secret of – sauce is the combination of fermentation and flavor balance. While the exact recipe for the original Worcester sauce remains a trade secret, the main ingredients are well known to the culinary community:
barley vinegar – base that adds a bright acidity
molasses (beet sugar molasses) – provides a pleasant caramel sweetness
fermented anchovies – give umami a deep taste
tamarind – adds fruit acidity, balances tastes
onions, garlic, cloves, black pepper and other spices – make the taste more expressive and rich.
The sauce has an intense taste, so it is used in small amounts of –, literally a few drops can significantly improve the dish.
