Tom Yum is a spicy and aromatic soup, one of the most famous dishes of Thai cuisine. Thanks to the unique combination of sour citrus, spicy peppers, and delicate coconut notes, along with various seafood and mushrooms, this soup has become extremely popular worldwide. If you want to try an Asian classic, you don't have to travel to Thailand β you can easily prepare Tom Yum in your own kitchen.The dish is known for its versatility, as it can be made with different types of seafood, chicken, pork, or even just vegetables or tofu (vegetarian versions). Adding ready-made Tom Yum paste significantly simplifies the cooking process while preserving the authentic taste.

We will need:
75 g of ready-made Tom Yum paste
250 g of seafood (shrimp, ready-made "sea cocktail" mix)
200 g of mushrooms (we used oyster mushrooms)
200 g of cherry tomatoes
200 ml of coconut milk (optional ingredient)
1200 ml of chicken broth (200 g of thigh fillet, 1300 ml of water, 1 onion, 1 carrot cut into sticks, salt and pepper to taste). However, plain water can also be used
First of all, we want to emphasize that we used ready-made Tom Yum paste, which already contains all the necessary herbs and spices (kaffir lime, galangal, lemongrass, shallots, red chili pepper, garlic, fish sauce, soy oil). This significantly saves time on cooking and eliminates the need to search for these exotic ingredients. We purchased it at a quite pleasant price from the online store Lontana. The paste can also be used not only for soup but for many other Thai dishes. Considering that 75 g of paste was enough to prepare 8 servings of soup, a 900 g jar will last a long time ;)
First, we boil the chicken broth. Making it is very simple: rinse the thigh fillet with water, place it in a pot, add water, the halved onion, and carrot. Put it on the heat and wait for it to boil. Reduce the heat (below medium), add salt and pepper, and cook for 20-30 minutes. Strain through a sieve. We will use the chicken and carrot to prepare Thai-style rice.
Boil 150 g of rice and also cool it down. Rinse it thoroughly with water, cover it with water in a 1:2 ratio, put it on low heat, and cook until ready. At the end of cooking, we can add a small piece of butter. Cool it down. We will use part of it for serving the soup, and part will be left for preparing Thai-style rice with chicken from the broth.
Peel the shrimp from their shells and remove the intestines. Leave 3-4 shrimp in their shells; we will use them for presentation.

Cut the oyster mushrooms into large pieces. Cut the cherry tomatoes in half. That's it, the preparatory stages are over.

Heat the pan, pour in the oil from the Tom Yum paste. If necessary, we can add a little more oil for frying.

Fry the seafood over medium heat. The indicator of the completion of the process is that the shrimp will change color from gray to red. Next, add the mushrooms and fry for another 3 minutes. Introduce the Tom Yum paste and mix thoroughly.
Transfer the mixture to a pot, pour in the broth, add the coconut milk, and wait for it to boil. Add the cherry tomatoes and cook for 5 minutes.
We note that we did not add salt to the soup since we used already salted broth. Also, the ready-made Tom Yum paste is quite salty and rich in flavors, so we did not add salt or other spices.
Remove from heat and prepare for serving.

Pour the soup into a bowl. Place a small amount of rice, finely chopped green onion, and a quarter of lime in a ramekin. Squeeze the juice from the lime, add the rice and onion to the soup, and enjoy.
