Every year, short-sighted garden owners face one important problem — what to do with zucchini? Oh yes, we also fell into this trap by planting 6 bushes of zucchini (the brother of the squash). So you can expect many recipes with this wonderful vegetable (◕‿◕)
Zucchini is a variety of squash. It differs from regular squash by its dark green (sometimes yellow) skin, more tender flesh, and smaller seeds. Zucchini can even be eaten raw, while regular squash is more often used for frying, stewing, baking, or canning. In most recipes, these vegetables are interchangeable, so you can cook with either squash or zucchini.
We started with standard pancakes. Of course, delicious, quite simple, but — "we've done that already." We decided to experiment a bit and add another meat dish to our diet. Meet chicken pancakes with zucchini!

We need:
zucchini — 450 g
chicken mince — 500 g
flour — 70 g
eggs — 2 pcs.
onion — 1 large
greens (we have green onions, you can also add dill)
garlic — 4 cloves
oil for frying
salt, pepper, and any spices you desire
We start with the star of today's recipe. Grate the zucchini on a coarse grater, add a teaspoon of salt (with a slight heap), mix, and set aside. This is done so that the zucchini releases juice, as we don't need excess moisture.

In the meantime, chop the greens, grate the onion and garlic on a medium grater. If desired, this could have been done with a blender to chop them. We didn't have that desire, and we had a grater, so here:

We return to the zucchini. Carefully squeeze out the "dried" flesh with your hands and transfer it to a bowl large enough to hold the other ingredients later.

Now add everything else to this bowl: eggs, flour, mince (pre-purchased), greens, pepper, and spices (if desired). Mix everything well. They didn't even trust me with this; my mom took the spatula (because I wasn't mixing energetically enough) and did it all herself 🤷♀️ On this sad note, we finish the preparatory processes and move on to cooking.

First, I recommend preparing a few plates with paper towels or regular thick napkins. We will send the pancakes here for "refinement," and specifically — these napkins will help us absorb excess oil. If you haven't understood yet, this is not a healthy dish at all; we will fry all this in a good amount of sunflower oil. If you want a less calorie version, bake these pancakes in the oven. Unfortunately, I can't advise on time and temperature because we haven't tried it ourselves yet (but it's in the plans).

Now let's go to the frying pan!
Pour oil into a dry frying pan, just enough to cover the bottom with a thin layer (I warned you 🥲). Set it over medium heat and wait for everything to heat up.

We place the pancakes with a regular spoon. Fry for about 2 minutes on each side.

Place the finished pancakes on a plate with napkins, cover with more napkins on top, and press down a little to absorb the maximum amount of oil. And so on until we fry everything. We ended up with 19 pieces. 😀 Well, that's it, sour cream will help you, enjoy your meal.
