It's mid-May on the calendar, which means the strawberry season is starting. So we decided to prepare a light and delicious dessert – a pie with a filling of mascarpone cheese and fresh strawberries. What we came up with – we will tell and show you further.

We will need:
For the dough:
250 g flour
100 g sugar
10 g vanilla sugar
2 chicken eggs
100 g oil
100 ml milk
12 g baking powder

For the filling:
180 g mascarpone
1 chicken egg
60 g powdered sugar (+20 g for sprinkling the finished pie)
400-500 g strawberries

Step 1: prepare the dough
Beat the eggs with sugar in a container until the mixture whitens. You can use either a mixer or a food processor. Add the milk and oil to the mixture, continue mixing until homogeneous.

Gradually introduce the flour and baking powder into the mixture, and at the end, mix gently again with a silicone spatula.

We entrusted all processes to the food processor, as we were simultaneously preparing the filling with the mixer.
Step 2: preparing the filling
Thoroughly beat the mascarpone, eggs, and powdered sugar with a mixer until homogeneous.

The mixture should not only become homogeneous but also a bit fluffy.

Transfer it to a disposable pastry bag and tie it up.
Step 3: assembling the pie
Spread the dough in a form lined with parchment.

We chose a round, low but wide form for quiche or tart with a diameter of 30 cm and a height of 2 cm, although you can choose any that you like.
Cut the tip of the pastry bag to create an opening with a diameter of about 1 cm.

Using spiral-concentric movements, starting from the center of the pie, begin to spread the cheese mixture.

On top, generously cover everything with washed and halved strawberries.

Step 4: baking
Preheat the oven to 210 degrees. Use the upper and lower heating elements, turn on the convection mode. Bake for 30 minutes. We can check readiness with a wooden skewer.
Remove from the oven, let it cool, sprinkle with powdered sugar on top, decorate with fresh mint, brew tea, and enjoy!
