In search of filling options for burger buns that are more interesting than the standard patty-iceberg-lettuce-cheese-onion-tomato-cucumber-sauce, we settled on a variant with chicken and vegetables. More specifically β on a variation of the Tex-Mex dish β fajitas. This choice was not accidental, as we had a spice mix with the same name in our spice supplies.
Fajitas seasoning β is a fragrant spice blend that adds a distinctive Mexican flavor to the dish. It combines spicy, smoky, and hot notes that wonderfully enhance the taste of the meat and vegetables. Its main ingredients are paprika, garlic and onion powder, ground cumin, coriander, black and cayenne pepper, Mexican oregano, and lime zest. Optional ingredients include salt and brown sugar. For the filling, we added a ready-made seasoning. So, we share our own recipe.

We will need:
Based on 6 burger buns:
500 g chicken fillet
Β½ sweet bell pepper
2 red onions
ready-made sauces (we chose βPaprikaβ and βMexican,β but they can be replaced with cream or cream cheese)
12 slices of processed (toasting) cheese
ready-made fajitas spice mix (or make your own based on the description above)
4 cloves of garlic
optional β Tabasco sauce (if you like it spicy)

Preparation
First, let's deal with the chicken fillet. We clean it from membranes and tendons. Cut it into large pieces, season with salt and pepper, and add a few drops of olive oil. We will cook it in a "Shaitan machine" air grill, as this significantly saves time. Set the temperature to 180 degrees and the time to 20 minutes. As an alternative method, you can bake the fillet in the oven or fry it in a pan with a little oil.
While the vegetables were cooking, the chicken was baked. We take it out of the air grill, let it cool for a few minutes (to work with it comfortably), and using either meat claws, two forks, or a combination of both, we shred the fillet into strands.
We return the pan to the heat. Add the shredded fillet, sauces, and fajitas seasoning. Mix thoroughly, taste for salt/pepper, adjust flavors if necessary, and simmer for 5-7 minutes.
Cut the buns in half and lightly toast them in the pan until golden brown. Now we can move on to forming the fajitas burgers.
We select a baking tray of appropriate size, line it with parchment paper. Place the bottom of the bun, then a slice of cheese, then the filling, then another slice of cheese, and cover with the top of the bun. We also made a garlic mixture that we rubbed on top of the bun. For this, we grate garlic and mix it with olive oil.
Preheat the oven to 180 degrees (with both top and bottom heating elements on, convection mode) and bake the burgers for 10 minutes.
