Cheese pancakes can be made sweet, neutral, or savory. We decided to prepare sweet cheese pancakes. What we came up with β we will tell and show you next.

We will need:
300 g of cottage cheese (the fattier, the better)
the yolk of one egg
30 g of flour (+ 20-30 for dusting the work surface and coating the finished pancakes, so a total of 50-60 g)
30 g of sugar (20 white + 10 vanilla)
a pinch of salt

Preparation
Since we used farmer's cottage cheese, which we purchased in the form of a small pressed head, the first thing to do is to crumble it with a fork or a pestle. If you are using store-bought cheese β it is enough to gently mash it with a fork.

Separate the egg white from the yolk, add the yolk to the container with the cheese. Also add sugar, salt, and mix well. Next, add the flour and mix until homogeneous.

Sprinkle the work surface with flour. Place the cheese mixture on it and start forming a sausage (as in the photo).

If it falls apart during the shaping process β you can add just a pinch more flour. If you add too much β the pancakes will turn out a bit "heavy" with dough.
Cut the sausage into equal parts, form the pancakes, and coat them in the same flour used to shape the sausage.

Fry in a non-stick skillet over medium heat on both sides until golden brown.

And since in our case the pancakes turned out quite thick, after frying we also baked them in the oven at a temperature of 190 degrees (with the top and bottom heating elements on, convection mode) for 10 minutes.
