Chocolate muffins with kefir are a wonderful way to combine the rich taste of chocolate with the delicate texture of a muffin. Kefir not only adds lightness to the baked goods but also makes them much healthier due to its probiotic properties. The muffins are prepared quite quickly: all stages will take less than an hour. So let's move on to the recipe and reveal the tricks we used during the preparation.

For the dough:
240 g of flour
150 ml of kefir
10 g of baking powder
180 g of sugar (we used brown cane sugar, purchased here)
2 eggs
40 g of cocoa powder
100 g of chocolate (we used a bar of dark chocolate with crushed hazelnuts, but you can use any according to your taste or preference)

Step 1: preparing the muffins
Preparing the dough for the muffins is probably the easiest step. And in general, we have already said that this is a very simple and quick dessert to prepare. We simply mix all the ingredients together. First, the cane sugar with the eggs, then we add the kefir and mix.
You can use a whisk, fork, silicone spatula, or combine tools for mixing. We took the spatula after we added the dry ingredients.
Add the sifted flour, baking powder, and cocoa to the mixture, and mix until smooth.

Break the chocolate bar into small pieces and fold it into the dough. Mix thoroughly once more.

Our dough is ready, we can pour it into the muffin molds. We used reusable silicone ones.
Preheat the oven to 180 degrees and bake the muffins for 30 minutes in convection mode with the upper and lower heating elements turned on.
Step 2: preparing the cream
While the muffins are baking, we can prepare the cream that we will use to decorate the finished baked goods, which will slightly balance the sweetness of the chocolate.
The cream is quite simple to prepare. Just place all the ingredients in a bowl and beat thoroughly with a mixer until smooth. After that, place the entire mixture into a pastry bag. We can temporarily put it in the refrigerator since we will decorate the muffins after they have cooled down. Otherwise, there is a risk that the cream will melt, as it contains butter.

The muffins have cooled down, so it's time to pipe the cream on top. Cut the tip of the bag and squeeze it onto the muffins.Β
