How to combine the delicate taste of cheesecake, chocolate brownie, and cherries? The answer is much simpler than it seems at first glance! There is a dessert that combines all these flavors, and it is called exactly the same: brownie cheesecake. Cherries are the very component that unites the delicate cheese and unique chocolate and will give our pie a sweet and sour accent.

And also – this dessert is quite quick to prepare. We will tell you how to make it next.
Step 1: preparing the brownie
Technically, we need to prepare the base for two separate desserts: brownie (chocolate pie) and cheesecake (cheese pie). Since making the brownie will take a little more time, we will start with it.
So, the ingredients we will need:
dark chocolate (200 g)
butter (200 g)
sugar (190 g)
vanilla sugar (10 g)
eggs (8 pcs)
flour (200 g)
salt (a pinch)
alcohol (rum, amaretto, Baileys liqueur, cognac) – whatever you prefer, ~50 ml. This is not a mandatory ingredient, just so you know.
The first step is to weigh the chocolate and butter, place them to melt in a water bath. Stir occasionally. We allocate 10-15 minutes for this process.

Next, we need to beat the eggs with regular and vanilla sugar. This can be done manually or with kitchen devices. We chose a food processor with a whisk attachment and left the mixing to its discretion ;)

We sift the flour to enrich it with oxygen.

In the bowl with the beaten eggs and sugar, we add the melted chocolate with butter. And gradually, we introduce the flour and a pinch of salt. We mix until a homogeneous consistency is achieved, adding alcohol if desired (from personal experience, amaretto made the most aromatic brownie, and Baileys liqueur came in second for aroma).

Step 2: preparing the cheese fillingFor the middle of our dessert – cheesecake – we will need:
cottage cheese (300 g)
eggs (2 pcs)
powdered sugar (50 g)
vanilla sugar (10 g)
corn starch (20 g)
optional – citrus (lemon or orange) zest.

We need to combine all the ingredients and grind them to a homogeneous consistency. You can use an immersion blender. We took a blender bowl with blades and again entrusted the mechanical process to it. In 3 minutes, our perfectly uniform cheese mass is ready.
Step 3: forming the dessert

Here we will need the cherries. We used canned cherries in their own juice, but you can also use fresh-frozen ones.
We take a baking dish. A recommendation from practice – choose a dish with high sides. If you take one with low sides, there is a chance that during baking the pie will rise and leave the boundaries of the dish in the oven and will “live” separately on the baking sheet;)
We line the dish with foil – both the bottom and the perimeter. There are options for using parchment paper on the internet, but we practice using foil.

We pour half of the chocolate batter into the dish. In a chaotic manner, we distribute the cherries. Generously place the cherries, you can do it chaotically, or you can lay out any pattern that you like.

Next, we carefully pour the cheese mass. You can spread it evenly with a spoon, but we just poured it in the center of the dish.

We pour the remaining chocolate batter and again place the cherries.

That's it, we have passed the most difficult stage, let's move on to the next one.
Step 4: baking
We baked the brownie cheesecake in an electric oven in convection mode at a temperature of 180 degrees for 45 minutes. It is advisable to preheat the oven, and only after that place the baking sheet in the already heated chamber.

If necessary, the quantity of all ingredients can be increased or decreased while maintaining proportions. It all depends on the size of the dish in which you will bake the dessert.
