Soljanka β a rather hearty first course that has many variations, probably no less than red borscht. But usually, it is a soup based on meat broth with the addition of various types of meat, such as pork, beef, or chicken. The main feature of soljanka is the use of pickled cucumbers and lemon, which gives the dish a refreshing taste with a recognizable sourness. Essentially, lemon, cucumbers, and olives are the βcalling cardβ of this soup.

In addition to meat and cucumbers, vegetables (potatoes, carrots, onions), black olives, and tomatoes (or tomato paste) are added to soljanka. Common ingredients of this dish include boiled and smoked sausages, offal (chicken hearts, liver, etc.). We also found a recipe that includes capers, cream, or lemon ketchup to add new flavor nuances.
However, this time we didn't have the time or desire to make the βclassicβ recipe, as we wanted to eat right now ;) So we decided to improvise and simplified the recipe a bit. We didn't boil the broth beforehand and used only chicken fillet for the meat. But this did not affect the taste quality of the finished dish in any way. So, we will describe the step-by-step stages of preparation and the products we used.
We will need:
3 liters of water
300 grams of boiled sausage
300 grams of salami
300 grams of chicken fillet
300 grams of hunting sausages
4 medium-sized potatoes
1 medium-sized carrot
20 ml of refined sunflower oil (for frying)
1 large onion
4 pickled cucumbers
200 grams of pitted black olives
tomato paste β 140 grams
salt, pepper, dill β to taste
lemon and sour cream for serving.
Step 1
We rinse the chicken fillet, cut it into small rectangular pieces. We fill a pot with water, place it on low heat, and add the fillet.

We cut the potatoes and carrots into small cubes and add them to the fillet. We salt and pepper to taste.

Step 2
We cut 2 types of sausages (boiled and salami) into squares about 1 by 1 centimeter.

We cut the hunting sausages into circles, also about 1 cm in size. We set them aside; we will need them in the next step.

Step 3
We prepare the vegetables for frying:

finely chop the onion
cut the cucumbers into sticks about 0.5 by 2 cm
cut the olives into rounds.

In a heated frying pan, we pour in the oil and wait for it to heat up completely. We add the onion, frying until it turns a barely noticeable golden color. After that, we add the olives, stir with a spatula, and fry for another 1-2 minutes.
We add the hunting sausages to the frying mixture for another 1-2 minutes.
After that, we add the cucumbers. They will release a small amount of moisture, but at this stage, we will also let it cook for about two minutes.Β
We add the tomato paste to the mixture in the pan. We mix thoroughly and simmer on low heat for another 4-5 minutes. Now our frying mixture is ready.
Step 4
During the time spent cutting the sausages and vegetables and preparing the frying mixture, about 30 minutes have passed. During this time, the water in the pot with chicken, potatoes, and carrots has already boiled, after which we reduced the heat to the minimum.
At this stage, we realized that we had taken too small a pot, so we had to urgently increase the container ;)
We took an 8-liter pot, poured the contents of the smaller pot into it, and immediately added the previously cut sausages and frying mixture, added salt, pepper, and dried dill. After that, we covered it with a lid and let it cook for another hour.
Step 5
Let's taste! We pour a few ladles of soljanka into a bowl, add a slice of lemon, a spoonful of sour cream, and enjoy the flavors and aromas ;)
