Empanada (sometimes referred to as Espanada) — a dish in Spanish, other Southern European, Latin American, and Iberian cultures around the world. In translation from Spanish, Empanada means nothing more than a pastry with filling, which is usually made from wheat flour and beef fat.
Empanada de atún — is a traditional pie from Galicia – a province located in the northwest of Spain. It has a filling of tuna, sweet bell peppers, tomatoes, onions, and garlic baked in shortcrust pastry. This is the pie we decided to prepare for dinner, but not according to the original recipe, but as always, with improvisations.
Ingredients
For the tuna empanada, you need to make the filling and also knead the dough.

However, we decided to radically solve the dough issue by using ready-made frozen puff pastry. Spoiler – it turned out very tasty;)
For the filling we will need:
300 g canned tuna
2-3 cloves of garlic
2 medium-sized onions
half of a red and yellow sweet bell pepper (or one large one)
400 g tomatoes in their own juice
1 boiled egg
salt, pepper to taste
Thaw the dough at room temperature, combining 4 sheets into 2. One will be the bottom layer, on which we will place the filling, the second – for covering.
We will also need one egg yolk and sesame seeds at the stage of assembling the pie.
Step 1: prepare the filling
Finely chop the onion. Crush the garlic with the side of a knife and also chop finely.
Cut the peppers into small cubes. Boil the egg and also cut it into small cubes.

Heat a pan, adding a mixture of olive and vegetable oils. Sauté the garlic for up to 30 seconds to let it infuse its aroma into the oil, but do not let it burn. Add the onion and sauté until softened (NOT browned).
Add the peppers and sauté until they begin to soften.

After that, we can add the tomatoes in their juice. Fresh tomatoes can also be used, but they need to be peeled and cut into small pieces beforehand. Sauté until excess moisture begins to evaporate.
Reduce the heat under the pan and add the tuna. After a few minutes, add the egg, salt, and pepper. Mix and simmer everything together for another 4-5 minutes over low heat. Let it cool slightly.
Step 2: prepare the dough
Combine the thawed sheets in pairs to make 2 rectangles.
Roll them out according to the size of the baking tray. If not rolled out enough, there is a chance that one of the sheets will not bake completely. The chance is small, but it can happen.
Place the filling on the bottom layer.

cover with the top layer. Carefully seal the edges, pressing them with a fork for an aesthetic appearance of the pie.
Take one chicken egg, separating the white from the yolk. Beat the yolk and brush it over the surface of the pie with a culinary brush.

Sprinkle with sesame seeds. Now our pie is ready for baking.

Step 3: baking
Preheat the oven to 200 degrees, turning on the upper and lower heating elements, and set to convection mode. Bake for 12-15 minutes (depending on the size of the pie)
