What to prepare for dinner with a small amount of vegetables, chicken, and a few Asian sauces? Rice noodles with vegetables! Recently, we bought rice noodles to try and thought for a long time about what interesting dish to make with them. Similarly, we had unagi sauce that had been languishing in the fridge for almost a month, so the recipe came together by itself. In the future, we will buy a wok and try to prepare this dish in a more Asian style. But for now, we share our creativity ;)

70 g rice noodles
400 g chicken fillet
½ large sweet bell pepper
2 large cloves of garlic
1 large onion
1 medium carrot
5-6 medium champignons
2 tbsp unagi sauce
40 ml soy sauce
100 ml milk

Preparation
Cut the chicken into narrow strips about 3-4 x 0.5-1 cm in size.

Heat a thick-bottomed pan, add a small amount of oil, and fry over high heat until a light golden crust appears (something similar to the stir-fry technique). Set the chicken aside on a plate.

Slice the onion into half rings, crush the garlic cloves with the flat side of a knife, and chop them. Add a little more oil to the pan, add the onion and garlic, and fry over medium heat for 3-4 minutes.

Next, while frying each ingredient, we will cut the vegetables into small sticks. That is, we will have a continuous process of cutting and frying. The photos vividly demonstrate this:
Also, parallel to these two processes, we put water to boil for the rice noodles. When we added and mixed the mushrooms, it was time to add the spices to the vegetables. This is the unagi and soy sauce. It will give the dish saltiness, so we intentionally did not mention salt in the recipe. You can add it if you prefer a saltier taste.

Almost immediately, we return the chicken to the pan and thoroughly mix all the ingredients.

At this moment, the water in our pot has boiled. We place the rice noodles in it and cook for 4 minutes. After that, we drain them in a colander, rinse with cold water, and add them to the pan with the vegetables and chicken.

Add the milk, mix thoroughly, and fry for another 4 minutes.

During this time, finely chop the green onion, slice the red pepper, and toast the sesame seeds in a small dry pan. Fry them without adding any fat, just a few seconds until a barely noticeable golden color appears.

We place the noodles with vegetables and chicken in a deep plate, sprinkle with onion and sesame, add pepper, and place a few lime wedges. Squeeze the lime juice, mix thoroughly, and enjoy a true feast of flavors!
