Lightly salted red fish – is a product that is quite simple to prepare, which can literally be made at home in just a few minutes. Among the advantages over the already prepared store-bought option is the ability to independently adjust the level of saltiness and add your favorite spices to your taste. And, frankly, it is a money saver.
In addition to the above advantages, lightly salted red fish, unlike canned in oil, retains more beneficial properties and has a more pronounced “natural” fish taste. This method of preparation will also appeal to those who are watching their figure, as oil adds extra calories.

We will need:
600 g of salmon (we used the part called “trimmings”. This is essentially the flesh without bones and skin, just visually it is not a solid piece of fish)
20-25 g of salt (3-4 g for every 100 g of fish, depending on taste preferences; a smaller amount of salt increases the salting time and decreases the shelf life of the finished product)
a pinch of sugar (1 g for every 100 g)
optional – black ground pepper and bay leaf.

Preparation
Since our fish was slightly frozen, let it thaw completely at room temperature. Rinse the salmon pieces thoroughly under running water. Dry them with paper towels.In a small bowl, mix the salt with the sugar. Evenly sprinkle the pieces with this mixture on all sides.Place the fish in a container, close the lid, and put it in the refrigerator for 10-12 hours, depending on the desired intensity of salting. After a few hours, you can turn the pieces to allow the salt to penetrate the fish evenly.The finished lightly salted fish can be stored in the refrigerator for up to 5 days. Before serving, you can rinse it lightly to remove excess salt.Lightly salted salmon is a great base for breakfasts. For example, sandwiches with white bread, avocado puree, and pesto sauce. A light, nutritious, and tasty start to the day. You can also make a delicious tartare from such fish.
