After reviewing the freezer, we found a tray of frozen blueberries. This berry, harvested on the slopes of Dragobrat, is also known as afinas or yafinas, depending on the region. It is extremely beneficial for the body and deserves a separate review in our blog. However, we wanted to work with it, using it as a filling for a pie.
This month's discovery is phyllo dough. This unleavened pastry dough, rolled out to translucency, is used to make traditional Turkish baklava. It is also suitable for making strudels and pies with various fillings β both sweet and savory.
Since making phyllo dough from scratch is extremely difficult, we took the easiest route: we bought ready-made dough at the nearest supermarket. We thawed it and began our culinary experiments ;)
We will need:
1 package of ready-made phyllo dough
melted butter (for greasing the sheets)
For the cheese filling:
350 g (1 package) of cottage cheese (the fattier, the tastier)
the white of one egg
100 g of Greek yogurt (can be substituted with sour cream)
1 tablespoon of cornstarch
vanilla sugar (10 g)
50 g of sugar
optional β coconut flakes, zest of orange/lemon/lime

Berry filling:
150 g of berries (in our case β frozen blueberries)
30 g of powdered sugar
1 tablespoon of cornstarch (yes, it will be needed twice)
Pouring:
the yolk of one egg
150 g of Greek yogurt (can be substituted with sour cream)
50 g of cream (we used 15% fat)
vanilla sugar and sugar to taste (we used 70 g)
optional β citrus zest

Step 1: Prepare the cheese filling
Separate the egg yolk from the white into different containers. We will use the white at this stage, and the yolk β for the pouring stage.
Place all the ingredients for the cheese filling into one bowl and blend thoroughly with an immersion blender until smooth.

Step 2: Prepare the pouring
In one container, combine all the ingredients for the pouring and whisk thoroughly with a whisk or fork. You can first mix the yolk with sugar, then add them to the yogurt and cream.

Step 3: Prepare the berries
Sprinkle the chosen berries (in our case, blueberries) with cornstarch and powdered sugar, and mix. The berries can be used fresh or frozen. In the latter case, thawing the berries beforehand is not necessary.

Step 4: Assemble the pie

Place the cheese mixture into a piping bag. Melt the butter. Unroll the dough. We decided to use 2 sheets at a time. Grease the top sheet with butter using a brush.

Using the piping bag, place a strip of cheese filling 1 cm thick along the entire length of the sheet (from our experience β you can add more filling, as the pie will turn out richer).

Alongside the cheese filling, place the berries (you can also take more berries here, as the last roll we made turned out to be just cheese).

Roll it up into a tube, which we then twist into a spiral.

Place in a round low form lined with parchment and continue until the dough or space in the form runs out. Coincidentally, we ran out of both at the same time. Just so you know, our form has a diameter of 30 cm, and it is a quiche dish that we never dared to make, but we hope to correct this unfortunate mistake soon ;)
Pour the pouring over the top, distributing it over the entire pie.

Preheat the oven to 190 degrees (we use top and bottom heating elements, and for the last 10 minutes β we turn on the convection mode), bake for 30 minutes.
