Oyster mushrooms are an edible mushroom from the same family as erinaceus (king oyster mushroom, white field mushroom β also an extremely tasty product that we will definitely write about in our blog). This time, oyster mushrooms caught our culinary attention, so we decided to quickly experiment with them.
We will need:Β
fresh oyster mushrooms β 500 g
250-300 ml sour cream (we used homemade, but regular store-bought is fine)
2 medium-sized onions (we used one purple and one regular white)
3 cloves of garlic
butter for frying
salt and pepper

Step 1: preparing the ingredients
Rinse the oyster mushrooms with water, cutting large caps into smaller pieces.

Small mushrooms that βclusterβ on a common stem are simply separated from the main element.
Chop the onion, cut the garlic.

The preparation stage is now complete.
Step 2: frying
Heat the pan, melt the butter. Add the onion and fry until softened.

Introduce the chopped oyster mushrooms, frying until excess moisture evaporates.
At this stage, you can already season the mushrooms and onions with salt.
It is important to note that frying should be done over medium heat to prevent the onion from burning and to ensure the mushrooms become evenly softer.
Step 3: stewing
When the excess moisture from the oyster mushrooms has evaporated, it's time to add the finely chopped garlic, sour cream, mix thoroughly, taste for salt/pepper, cover the pan with a lid, reduce the heat, and let it stew for 20 minutes.

During this time, stir the mushrooms occasionally to prevent them from burning. We have a non-stick pan, but it's still a good idea to stir the dish from time to time.

Step 4: tasting
Let the mushrooms cool down and taste them ;) Such oyster mushrooms can be a standalone dish, but they also pair wonderfully with a side of rice, potatoes, or buckwheat.
