At the end of the 90s and the beginning of the 2000s, when we were children, this dish was associated with celebrations. It was prepared for birthdays, New Year, Christmas, and Easter holidays. So, this dish is a liver cake: tender pancakes made of liver, milk, flour, eggs, and onions, smeared with mayonnaise sauce with garlic, and decorated with grated egg.

We felt nostalgic, wanted to find a βchildhoodβ recipe, and recreate this dish. But with nuances. We used healthy mayonnaise made from avocado oil, about which we wrote here. So, as always, let's move on to the list of ingredients and cooking steps ;)
We will need:
For the pancakes:
500 g of liver (we used pork. However, chicken or veal can also be used)
5 medium-sized onions
5 eggs
200 g of flour (a cup)
250 ml of milk (a cup)
salt, pepper to taste
2-3 tablespoons of oil

For the sauce:
300 g of mayonnaise
3 cloves of garlic

2 chicken eggs
Step 1: prepare the pancakes
Thoroughly rinse the liver, remove the veins, and cut it into small pieces. Pass it through a meat grinder twice, using a fine sieve.

Chop the onions, fry until translucent. Also grind with the meat grinder and add to the liver.

Add eggs, milk, salt/pepper, and flour to the mixture. We mixed the entire mass with a mixer in a large bowl of a food processor, as the mass turns out to be quite large. And only when our mass becomes homogeneous, without lumps of flour, we add 2-3 tablespoons of oil (we used avocado oil). The batter for the pancakes is ready.

Step 2: fry the pancakes
We fried pancakes of two sizes to later assemble 2 cakes of different sizes. However, you can choose any option based on the size of your pan. The main thing is to make the pancakes as thin as possible, as this will affect the final taste of the dish. Also, if you are using pork liver, too thick a pancake risks not being fully cooked inside, which is a bit risky for health.
Step 3: prepare the sauce
Using a garlic press, squeeze 3 cloves of garlic into the mayonnaise and mix thoroughly. You can use either homemade mayonnaise or store-bought.
Step 4: assemble the cake
Start layering the liver pancakes on a plate. Spread them with mayonnaise sauce, not too thick a layer (otherwise, the sauce will overpower the delicate taste of the liver and interfere with the assembly of the cake). The layers can range from four to seven or eight, depending on the thickness of the pancakes and the amount of sauce.

Decorate the top with grated egg. This βdecorationβ will also protect the top layer of mayonnaise from drying out. Yes, this presentation would not be appreciated on MasterChef, but it is delicious and takes you back to childhood.

From the amount of ingredients specified in our recipe, we managed to make 3 cakes: one small with 7 layers, and 2 large ones with six and four layers. Therefore, the amount of ingredients can be adjusted, just make sure to do it proportionally.
